Safety Stock is "set aside" inventory that is not available for sale.  Think of it as a buffer that prevents you from accidentally overselling a product.

Amplifier by defaults assigns a Safety Stock value for any new stocked Item created. We recommend that you set your Safety Stock for each item based on the velocity of the item, to facilitate RMA-related activity, emergencies, and general inventory shrinkage.
